Sweet potato salad with pickles and capers

Sweet potato or yam ? Although you might think they're the same product, there are a couple of fairly distinctive differences. The first is the color. The sweet potato is the variety with red skin, while the paler-skinned ones are the yams. The other big difference is that the flesh of sweet potatoes softens with cooking, while that of sweet potatoes remains firmer. Well, in our recipe, we've chosen the one that does soften: the yam.

Ingredients for 2 people:

For the salad:

  • 2 potatoes
  • 1 sweet potato
  • 1 sweet and sour pickle
  • 1 tablespoon of capers
  • 1 spring onion
  • Canned dill

For the sauce:

  • 100ml of oat or soy milk
  • 300ml of sunflower oil
  • A splash of squeezed lemon
  • A pinch of salt
  • A tablespoon of old-fashioned Dijon mustard (with pellets)

Although this step won't take you more than two minutes in total, if you prefer, you can use jarred vegan sauce and add a teaspoon of mustard . We like the Coosur brand best, which is egg- and lactose-free. I think they sell it at Carrefour.

Let's get down to business...

Bring a pot of water to a boil with a tablespoon of coarse salt.

Peel and cut the potatoes and sweet potato into 2-3 cm cubes and boil them until they're tender with a fork. It won't take as long as you think; it'll be ready in about 10-12 minutes.

The time will also depend, logically, on how large you cut the segments.

Meanwhile, cut the pickle into small pieces and set aside. 

Cut the spring onion into small slices and sauté it in olive oil for a few minutes; you don't need to overcook it.

Let's get to the sauce:

In the blender glass, add the oil and milk (it's very important that they are at the same temperature for proper emulsification), the salt, and a dash of lemon juice. 

Beat at medium speed without moving the mixer from the bottom of the glass.

In approximately 1 minute you will have the vegan sauce ready.

Add the mustard and mix well to obtain a smooth sauce.

Homemade veganaise is much thinner than canned veganaise. Don't expect it to thicken as much as regular mayonnaise.

It's time to assemble the salad, which is not more difficult than mixing the potatoes and sweet potato with the rest of the ingredients and decorating it with a little dill on top, so that it looks like this:
