It seems like we're finally starting to get back to normal, and we're finally going to leave the couch and our beloved fridge alone. It's always a good time to continue eating well and, why not, lose those extra pounds gained during quarantine. Plus, with the heat we're having, we crave simple, easy, and healthy meals like the one we're suggesting today.
Broccoli salad with avocado and walnuts
Ingredients for two people :
- 1 Broccoli
- 1/2 Apple
- 2 avocados
- 1 slice of onion
- 1 handful of walnuts
For the sauce :
- Virgin olive oil
- 1 tablespoon Dijon mustard
- 2 sprigs of parsley
- 2 sprigs of mint

If we could say there's any difficulty with this recipe, it would be boiling the broccoli for 2 or 3 minutes. So, heat a pot of water with a little coarse salt, and while it's heating, cut the broccoli under the stems to separate the florets.
Chop the onion slice. Peel the half apple and dice it. Do the same with the avocados.
Once the broccoli is boiled, let it cool and then simply mix it with the rest of the ingredients.
The sauce is also extremely difficult . Chop the parsley and mint finely and mix well with the oil and mustard.
